If you can point us at images of a few sample pages, it might be easier 
to make suggestions, but in general:

Prose text is most commonly encoded using divisions (<div>) and 
paragraphs (<p>), with linebreaks encoded as milestones (<lb/>). See

Verse would be encoded using line-groups (<lg>) and lines (<l>), where 
the lines are container elements, not milestones:

Other types of text such as log entries might be encoded as lists 
(<list> and <item>).
