Sorry for the late reply, did you found anything?
There is a good comment in the source code of
org.apache.cocoon.components.store.impl.EHDefaultStore. Basically you
want to play with private static final String CONFIG_FILE =
"org/apache/cocoon/components/store/impl/ehcache.xml";
