I think you should start from there. Cocoon 3 is a bit different framework than Cocoon 2 was, although still modular and based upon Spring. But from version 3 it can run without any servlet component (servlet-sitemap). You can use it as a library (maven dependency) from command line e.g. https://www.jeroenreijn.com/2011/03/simple-xml-processing-with-apache.html Or you can integrate it with any Web Container like Tomcat/Jetty etc. Please see examples directory for such configuration.
