Symbol is not a generic font family ('serif' | 'sans-serif' |
'monospace' | 'cursive' | 'fantasy'). Therefore you cannot use the
genericFontFamilies command-line option to remap it. More information in

If you want to use "Lucida Sans Unicode", then simply specify
font-family=" 'Lucida Sans Unicode' " (notice the quotes) in your XSL-FO
input file.
