Hi Vicky, For a time there was also a site at cork.linux.ie and you can find it on archive.org now. There was also the Linux Awareness in Ireland Day event in 1999 in Cork that was well attended. I found the event page on archive.org at https://web.archive.org/web/20000305190423/http://cork.linux.ie/events/laid/index.php3 if you're interested in seeing more about it.
