What I did was left the /dev/sda (with windows 8.1) untouched. Installed ubuntu on the /dev/sdb including installing the boot partition there (/dev/sdb). Now when I boot my laptop, it loads the disk I've set as the default boot disk, but if I want to boot the other OS, I press F12 on my laptop where I can select the boot device. Then I can choose to boot from sda in windows or sdb in Ubuntu. I didn't plan on leaving it that way but it actually turned out to work pretty well so never bothered changing things!
