If you've really got your heart set on XML, the native format for OpenOffice uses XML (it's a directory structure inside a .zip file that uses XML for most content). You can't easily switch between editing the XML and editing in OO, though -- you'd have to save the file, unzip it, edit the XML, re-compress, and then reopen in OO. That is, unless someone's written an OpenOffice add-on that will do this for you. If you're not wedded to XML as a format, I suggest taking a look at LaTeX, either hand-edited in your favourite text editor, or via LyX (A GUI editor that uses a subset of LaTeX as its file format).
