The age helps with most, if not all methods.

But I've also found that using a pressure cooker works. 1The 5/5/5 method 
(set to 5 minutes high pressure, slow release for 5 minutes, 5 minutes in 
an ice bath) does perfect eggs, and the shells just fall off, even for 
young eggs.
