boy oh boy, sphinx via php documentation is flaky at best.
it appears (although i am still not 100% sure yet), that $sphinx->open(); needs to be called BEFORE $sphinx->setServer(... if one wishes to initiate a persistent connection.
a little early to tell, but when using ->open() AFTER->setServer, i was receiving a lot of:
sphinx_query() must not be called after sphinx_add_query()
which appears to be sphinx complaining about running queries on a connection after a query has been ran (thus, non persistent connection...)...
