You can give lots of people access to the master on github.  And in
fact, with the addition of ACLs everyone should have write access to the
master tree.  I don't think this is defeating the point of git at all.
It is simply making git fit our model.

As Brian said, github gives us a decent Web interface and a really easy
way to make dev work public.  Git without github is a lot less appealing
to me.  At the same time, giving up control of our master code
repository is rather scary.
