best practice for configuring Linux on a SAN array

I've got Red Hat EL 3 AS running on a Dell PE1850 connected to a Dell/EMC SAN, fibre channel. I installed a minimal installation on the two onboard drives, set up as a RAID Level 1 array, and of course want to put as much of the OS, applications and data on the SAN array drives as is possible.
