I think I can answer this one.

The documentation SUCKS.  There is no usable "quick start" guide that I
am aware of.  Please provide a link, if I am wrong.

Exim is perfectly usable IF you install Debian and start from there.
It's very easy to customize and the documentation is fine once you have
something going.  I expect that other distributions are similar.
