I have no trouble being spontaneous with PowerPoint, as long as there's a 
white board or flip chart in the room as well.  Even nicer is if there's a 
suitable white board to use as the projection screen, so you can quickly 
annotate stuff you've just projected.

Before digital displays, I used a OHP with blank transparencies for writing 
notes on, or as overlays.
