This is how I do it. Pierce the blunt egg of the egg into the air sac with a
pin. This helps prevent the eggs from cracking while they cook. I use a tiny
watchmaker type screwdriver for this. Bring the water to the boil and then put
the eggs in the water. Bring back to the boil and then simmer for 13 minutes,
then plunge the eggs into cold water. Lightly crack the eggs all over and leave
in water for a few minutes and then start peeling from the blunt end.
