Help with Pita bread?

Hi! Anyone make Pita breads? Sometimes called 'pocket breads'. My recipe works but the pocket isn't very big so I end up digging them out a bit. 1 1/2 lb (12 pita pockets) 1 c water 3 TB olive oil (30ml total) 3 c bread flour (i've used all purpose as well to good effect) 1 1/2 ts salt (7.5ml) 1 TB active dry yeast (15ml) Run machine in dough mode then remove and punch down. Divide dough into 12 portions and shape to a ball. Let rest for 10 minutes an prep a baking pan. Oven to 450F. Lightly flour work surface and roll out into 6-7 inch circles. I deviate from the recipe slightly as I do 4 at a time. They do 2 and only 2 minutes per side. I do 4 pitas and 3 minutes per side. (I've done just 2 at 2 minutes and they come out the same). Cool on wire bakers rack. Repeat with remaining dough. Anyone have any ideas?
