How do I record in stereo

I've looked up how to record in stereo time and time again but no matter if
I'm using a USB (which only a few types of USB's work) or recording
straight from my computer nothing works. It's recording two tracks but not
recording the sides differently. I really want to use Audacity to record
from my record player. When the USB is in my computer (the one that works)
there is no option that says "USB". I'm using an Asus Windows 10 and
Audacity 2.3.0. Could you help?
