Configuring Audacity to record in a particular way seems (to me) to
be somewhat of a black art.

The Audacity web site has lots of documentation (FAQs, HOWTOs, WIKI)
on how to do specific things with Audacity, I'd urge you to go look
there. Including the user forums.
