OT: I need a DVD compression program.

I've ripped some DVD's onto my hard drive (G5 OSX10.3.8, DVD drive etc) using 'mac the ripper' This produces a folder with a video and an audio folder. I assume if this whole folder was burnt to a DVDR it would work in a DVD player. At the moment I watch them with OSX's 'DVD Player'. So any advice on how to create a DVD from these files would help me. Also some of the DVD's are 6-7Gigs. I suspect my DVD drive only supports 4.2 (Idon't know).
