You will get lots of replies, but I love Metric Halo. I think they are the best interfaces for Mac, the sound quality is fantastic, the flexibility is unparalleled and the customer service is second to none (I created a problem for myself at a gig one night and the president of the company emailed me back at 8pm his time on a Saturday night with the answer to my issue).

The ULN-8 is their flagship and is on par with anything out there,  for both converters and mic pres. The ULN-2 is also excellent if you can get by with two analog inputs and the 2882 is also excellent. I have a ULN-8 and 2882 and can make recordings of a very high quality.

As an added bonus, there is an 80 bit mix bus with DSP (including the very well regarded MH Channelstrip) allowing you to do summing of 18 tracks per box outside Logic with character emulations from many famous consoles and other pieces of outboard gear, all without any strain on your computer. The plugins can also be used within Logic with their very well executed plugin plugins (including a very nice reverb, which I like much better than Logic's and a very cool transient controller). 

Additionally, when doing band basic tracking and other live recording, you can record using the MH record panel which places very little load on the computer. I've recorded 32 tracks to a bus powered 2.5" 5400RPM USB drive with no issues all night long, while running other software on a MBP.

It would take a long email indeed to cover all of the capabilities of these boxes, but the long and short of it is that they sound great, have excellent flexibility and will not be obsolete for a very long time and integrates with Logic very well indeed (I just got PT 9 because it's supposed to now work with 3rd party interfaces, but compared to Logic, it's cumbersome, so I just said screw it and stuck with Logic).

PS There are people out there making great recordings using Metric Halo with G4 laptops, so you should have no issues with your G5. Any Mac with a firewire port will work fine.
