The easiest way it is indeed TouchOSC you already have.
With Logic 9.1.3 you don't need any other software on the Mac as you might know.

And take a look at the TouchOSC Editor. You can create you own templates.

Logic can record automation when you are using TouchOSC.
You are just using a different way to control a fader/knob/parameter.
Logic records the automation as usual.

I have Garage Band for the iPad. It is a great piece of app.
Nicely done by Apple.
Really fun and it can be used as a great compact and extremely light weight setup for music ideas, composition and audio capture on the go.
Yep. You'll need Camera Connection Kit to use a USB controller.

Apogee is releasing two great products to use with Garage Band-iPad.
A condenser mic and a guitar/bass little audio interface.

IKmultimedia also has a mic and guitar input device for iOS devices.
