If you are on Windows, I'd recommend using cdex (http://cdexos.sourceforge.net). It's a wonderful open source ripping utility that does ID3, CDDB, etc. and supports a large number of output formats. On the Mac, iTunes is hard to top unless you have a very large music collection (iTunes can't deal with mine :(). Audion works well also, but the interface isn't to me liking. On Linux, I'm a big fan of grip. Hope this gives you some ideas...
