You mean the 'From' Address for the mails you try to get into roundup?

If you've already considered mail header rewriting, I'd suggest
inserting a 'Resent-From:' Header. Roundup will prefer this header to
the 'From:' header in the mail. If the Resent-From: contains an email
address of a valid account in roundup, roundup will allow the mail and
add it to the database (usually as a new issue but you can configure
subject matching).
