Are you sure that creating a new tracker per project is really required?

Is really everything different from project to project?  
What I mean is: Do you have totally different users in each project?

If not then it might advisable to use the single same tracker instance
for all of your projects at once.

One way to do this is to create a new "project" class and use 
this to keep information apart.  

Or even simpler: you could use issue instances for each of your
projects and add a new property to the issue class, which you
can use to distinguish between "project" issues and "normal"
issues being subtasks of some project.  May be you can make
use of the "superseder" property to link all issues belonging
to a project to those super issues representing your projects.

May be you can elaborate in more detail, how and why you are using 
different tracker instances for your projects currently?
Why can projects not share certain information common to all projects
within the same Roundup tracker instance?
