Word 2003 goes a bit further in this regard. You can apply a schema to a
Word document, and Word will allow the author (or a template author) to
apply schema elements to sections of the document. Word will even validate
both the structure (e.g. will identify missing required elements) and the
content (e.g. if the content doesn't match a schema-defined regular
expression, it will underline it with a purple squiggly line).

It's not a perfect solution for everybody, as the document author is free to
type text that is not in the schema and thus will not be
captured/transformed. But if you just want to capture certain required parts
of a document, it may be a good solution.
