Are RAID5 disks not enough? Else this seems more a problem of hard drive 
clustering than a problem of Jahia itself...

If your hard drive crashed I doubt Jahia will continue to run especially if 
your database is also on the same hard drive ;-)

In such a case, use a "wget" or similar command once a while (e.g. every 
day, week, month), put a copy of the static pages on a front-end Apache 
server and, if Jahia does not respond any more, automatically redirect to 
the static copy of the site until repair/reboot. Of course this is only 
valid for the anonymous access ("guest" in jahia) and users can not logged 
in any more...
