Yes, you are right I forgot about refreshing links. You do need some way Access can uniquely identify rows in the server tables so it can reliably update them. You probably do not strictly need a primary key, just some combination of columns that uniquely identifies the rows. A primary key is the simplest way of doing that. A timestamp will also provide a unique column for this purpose.

[JS] I agree with John on both points, except that you don't have to unlink the tables: just use the link manager to refresh the link. I'm not even sure you need a primary key, although I've never had any reason to test that.
