I like my interfaces simple with lots of space to work with.  Any tool that allows me to personalize the toolbars is great.  Because that's exactly what I do.  I didn't respond to the initial question because the bottom line is:
"the initial style is fairly meaningless to me"

For myself, I always got our tech crew to do a completely fresh install of the app.  I never selected to import my previous user information.  I wanted a clean application to work with that I would step through the toolbars and evaluate each item.  That allowed me to find out about any new features that showed up in the toolbars.

Once done examining those kinds of changes, I'd disable most of the toolbars and strip the two or three toolbars I found acceptable down to just a few icons each.  Anything like the save icon - gone!  I continue to build up on my knowledge of hotkeys.  And if you know the hotkey, you don't need the icon.

I recently got a new desktop with Win7.  And I can tell you: I really need to figure out what I can change where to get appropriate visual recognition involved.  A huge irritation at the moment is that when I use search functionality (any app including MS' own) the line it settles on has such a light yellow highlighting that it's crazy.  A very light color on a white background?  And Microsoft thinks that helps?  The first thing I did with the new PC was to go into the Office apps and adjust the ribbon so it simply doesn't show up.

So there's an opinion from someone who likes to be productive: a facelift upgrade on look and feel is not necessarily the best option and sometimes the "tired and worn out" really is the best choice to continue to be productive.

I suspect that internal email you get on the subject is from either:

a)  Management

b)  Marketing

If they really want a new UI design implemented and you have no choice: fine.  Implement a new one.  But please leave in the options to customize as we see fit.  So long as I can strip down any toolbar/ribbon/whatever and just have the selections I want for that purpose - I'm good with whatever style is selected :)
