The biggest one I work with, the FOGRA39 definitions for coated stock, is only 8.3MB. EXIF tools are different, but a 2.1GB profile looks like an error. Is the actual image bigger than 2.1GB? If not, then the length field is bogus and I don't know how you would go about fixing it. Unless you are going to be doing some in-depth work on the colour correction of these images, you could try stripping the profile completely using something other than exiftool — can you do it in GIMP?
