As long as you don't publish on the internet, your data are relatively safe.

Medical data can be recorded either as person attribute(s) if it can be 
categorised concisely or as person/family notes. In either case, mark

If you generate web pages (e.g. for access by other members of your 
family at large), don't hesitate to flag "sensitive" information as 
private, for example events related to living persons, sometimes even 
their names can be "sensitive".

You can still display and edit the information in Gramps but it doesn't 
leak outside.
