Gramps supports sequential legal names at specific date ranges. It also support simultaneous Aliases as well.
It sounds like you describing an immigrant choosing to "anglicize" (which is less pejorative than "waspy") their birth name in order to blend into an English culture.
You can log the date ranges when a person uses a variety of names (or titles) in the Name Editor, accessed from the Names tab of the Person Editor.
This has been discussed extensively previously. You can read one such discussion on the Gramps Discourse forum. (In that case, the user assumed the immigration bureaucrat at Ellis Island mangled a name and wanted to log the offense. Which is a common Ellis Island myth. An additional level of logging might include adding custom event type (such as "Legal Name Change" simply so it will be more visible in any timeline reports. (However, the Name Editor is the preferred option.)

I had this individual under his <new-WASPy-name>.
What is a good way to record the newly-discovered previous name ?
I didn't see a way to record this name change as an "event" for this person.
To me, the ideal would be to have the individual ending up recorded as
<new-WASPy-name> aka <italian-name> , with an event (or whatever)
explaining that there was this legal name change on <date>, state file
reference "DCR File 12345".
What is the best way to record this in Gramps?
