Re: Proper way to record death on a ship?

First off, there is no "Proper" way. There is the way that works best for
you.

This is the way I handle this, others may have other ideas.

Event type: Emigration <date> place of departure with Description "on board
'ship Name/information'"

If he had made it to his destination I would add an Immigration event with
the same event set up but instead create his Death event with the place
"North Atlantic" with the Description again information about the ship.
