Depends on if you are plotting grids or tables.
For grids you could use grd2cpt to stretch the cpt to file that grid range.
For tables you can use gmt info -T... for getting a suitable -T option to use with makecpt.

Unfortunately there is no tutorial on how to make or use cpt files, but as my class progresses there will be a podcast on iTunes University discussing it in a few weeks.
