I had a quick look at the code that saves sensor-config. It's very 
simple and basically rewrites the whole file. For safety reasons it 
might be better to write a temporary and move it, overwriting the old 
one. I'll have a look at how gkrellm main-config is written but I think 
it works exactly the same way, in theory both files would be affected by 
such problems.

The problem described sounds more as if gkrellm would constantly rewrite 
sensors-config, I could not find anything like that in the code though.
