the only easy way that i know of to set up evolution's configuration
information on many computers is using Evolution GConf Tools, which have
been written in the hope of automating mass deployments of evolution.
a tarball should be available at
http://people.redhat.com/dmalcolm/evolution-gconf-tools, also check
http://live.gnome.org/Evolution_2fGConfTools for more information.
