It is possible. KAMI does it with its OxygenOffice build based on
ooo-build. We do it with the Novell Windows build. We do not do it with
the openSUSE Linux packages because it is not systematical.

Fox example, KAMI integrates the Magyar Libertine fonts by
http://cgit.freedesktop.org/ooo-build/ooo-build/tree/patches/dev300/magyarlinuxlibertine-fonts.diff. Plus there are few lines in ooo-build/{configure.in,download.in,bin/unpack}
