I do this all the time.  The fact you are getting the splash screen
should indicate that you have x11 forwarding configured.

Did you make sure evolution was not running on the remote box?  I setup
a script that issues a --force-shutdown then issues the evolution
command to start things.  This allows me to setup a launcher in gnome to
let me just select an icon on my laptop.  The launcher runs ssh
ipofremote scriptname.  This lets me run evolution without having to
have a terminal window open.

When you connect via ssh do you get any error messages in your terminal
window?

I also suggest you enable compression on the ssh connection (can do this
in the sshd_config file or on the command line).  But that would not
cause your problem.
