Gnome (including Evolution) was previously set to run a certain command to start mozilla, and that probably changed. Find the setting in the Gnome control center (hint: gnome-default-applications-properties is the binary for setting this), and make sure that it's taking into account whatever changes were made to the name or path of the mozilla wrapper. If the current setting runs some sort of wrapper that does something clever (e.g. opening a new window in a running mozilla process rather than starting a new mozilla process), that wrapper may need updating.
