Afaict, OpenJDK doesn't work correctly if it is built for a MinGW target. See,
e.g.: https://github.com/msys2/MINGW-packages/pull/20006 (and the PRs and
issues linked to or from it).
If the MSYS2 packagers come up with a set of patches to make that work (and
that set of patches looks manageable), we could reconsider packaging the JRE
as part of MXE Octave. Until then, it is probably best if users get their JRE
from a different source. (And maybe improve our documentation if it is lacking
that information.)
See also bug #66936 which raised the minimum Java version to 1.9.
@tiborauer: Could you please share which version of Java you are using?
