I agree with all of that.

For the demos, there is already the Bias and the csisland demos that are
worth to be improved. There is a page about that on the trac:

The csisland demo uses the assets from Yo Frankie that are numerous and
of very good quality.

The ones from Bias are far less nice (no offense) but are quite numerous
though, they also cover a quite big castle which is an interesting
example of portals and sectors (maybe this can be linked/merged with the
walktest's 'castle' level?).

For other assets, there are also more and more free models available on
the net, eg on Blend Swap: http://www.blendswap.com/
