Have you actually verified this claim? This not how it works.

For example, I occasionally use classic film simulations. Rendering
the image in color using Kodachrome film presets inside DxO Optics
Pro, or rendering the image in monochrome using Agfa film presets
inside Nik Silver Efex. The resulting EXIF doesn't say "Film camera";
it still says "Olympus" or "Panasonic" or "Fujifilm" or whatever
digital camera I happened to use, and all of its parameters. And it
also says "DxO Optics Pro" or "Google Silver Efex Pro" in the
"Software" field. Nothing is invalidated.

Here is another example:

Take a photo with a fish-eye lens (or download one). Load it into a
competent image editor, straighten it (or "de-fish it"), and save it.
Does it mean you somehow went back in time and took the photo with a
different, rectilinear lens? The final image may be straight, but you
still took that photo with a fish-eye lens.

And the final EXIF shows exactly that.
