Can one use them to edit text or are they strictly configuration > settings? They apply as property of text object. I.e. if xml:space=default (single space button), and you happen to have many consequtive spaces in text, they will be presented as single space visually. You can toggle xml:space between default and preserve, and the presentation of text object should change. Now - text dialog is somewhat buggy, so it tends to lose your extra spaces, if you use dialog with xml:space="default". So better do not play with it, unless you know what happens in SVG file level. Default for new files is to keep spaces (xml:space==preserve), that should be optimal for most people.
