I am living in Kyoto, so my recommendation only for here.  There is a
big branch of the SofMap chain right next to Kyoto Tower a few steps
north of the main railway station.  They have a good selection of
Zaurus models, accessaries and the like (I got my SL B500 there).
Depending on your length of stay in Japan, you might also want to
purchase the 5 years warranty against theft, damage and the like.

The power adapter included is only 100V 50/60Hz (with my SL B500, but
as far as I know the same is used for the 700 series).  Sofmap has
third party power supllies for about 3200 Yen that can be used
worldwide (and are even smaller than the ones from Sharp).

Yes, you don't need any extensions to do that.  There is just a line
in the start up scripts you have to change.

I used my Zaurus frequently on trips w/o any problem with the said
power adapter and an addtional set of connectors.
