You've described the problem perfectly. It's always the firmware/software
side that is a problem. Apps, cloud subscriptions, browser plugins, etc.
are no good. I was hoping to find suitably capable "dumb" modules that
could be coupled to a Raspberry Pi or something. Perhaps I might find that
if I search Aliexpress carefully enough as Russell suggests.

In the past I had looked long and hard on the 'english/american' internet,
and I had only come across maybe one development kit for a camera module
that checked a measly half of the boxes. It seems the suppliers of
expensive professional outdoor camera units have the market cornered.
