I can't speak for most of the areas you're heading
into, but in gaming the definitive collegiate text is
"Game Design Workshop," by Fullerton, Swain and
Hoffman.  

I have no axe to grind, other than collaborating with
Fullerton and Swain on some interactive business years
ago.  But I've read the text, and I think it's
wonderful.  It's also the text used in the USC School
of Cinema-Television graduate course that Swain and
Fullerton teach.
