I would endorse James Hartley's "Designing instructional texts" - tried and
trusted, and based on sound research.

Also worth getting hold of are:

JONASSEN, D. H. E. (1982) The technology of text: principles for
structuring, designing and displaying text, New Jersey, Educational
Technology Publications.

ROMISZOWSKI, A. J. (1981) Designing Instructional Systems: decision making
and course planning in curriculum design, London, Kogan Page.
