in debian you need to modify /etc/cyrus.conf replacing the listen option
for each service you want:

pop3        cmd="pop3d -U 30" listen="localhost:1100" prefork=0
maxchild=50

i don't know very much about perdition but in the manual page take a
look to the -b, -p and -s options.

with the above example of pop3 bind and port option, you can run
perdition.pop3 with:
 -p 1100 -s 127.0.0.1

if you change the imap port in cyrus you need change the ispman perl
script to connect to the new port and not the standard 143/tcp.
