Migrating structure changes from a Development to Live instances of Jira

Hi, I was wondering if any of you have a development server where you try out new stuff before using it on the live production server. Such changes as new custom fields/ updates to exisiting fields etc. What process do you follow to ensure the changes are migrated from the dev server to the live server and how do you ensure there is no human error in copying the changes across? Since this is a Live production instance of Jira the existing projects/issues need to be pretty much left alone (depending on if the update has changed anything that affects existing projects/issues).
