Todd answered most this well... I'll just hit this one
quick though.

You would use the server because while its great that
flash can handle web services... in the end it is much
more efficient to let the speedy server process the
webservice and send up serialized compressed binary amf to
the client via remoting. It's just much faster and more
efficient.
