AFAIK the only way categories are implemented in KAddressBook is that you can 
assign them to individual contacts, and search by category name. Both works 
fine for me.
It would be a very nice feature to have to contacts grouped by categories in 
the KAddressBook UI.
I have the same Kubuntu/KDE setup as you, and use ownCloud as CardDAV backend.

Categories/Tags/Groups isn't a CardDAV feature btw, but part of the vCard 
specification [*]
