In ArgoUML, you can show and hide class compartments individually per class.
Select the class on the diagram, and then click the "presentation" tab below.
Does this cover your needs?

I worked on this feature in the past, and decided to implement is only on class
level, not on diagram level, to prevent too much complexity (for the code and
for usability). 

Personally, I do not find it user friendly like it e.g. works in EA: in EA you
can set it individually per class AND per diagram - but it is not intuitive to
know which overrules which.
